  • 300 g cashews 
  • 150 g water 
  • 200 g sugar
  • 1 packet vanilla sugar 
  • 1½ tsp cinnamon
  • 1 pinch of salt

Preparation

In a sufficiently large pan, bring the water, sugar, vanilla sugar, and cinnamon to a boil until the sugar is completely dissolved. Add the cashews and continue cooking, stirring constantly. Once the water has almost evaporated, reduce the heat slightly.

When the sugar begins to brown, reduce the heat further and be careful that the mixture doesn't burn. Sugar and cashews can blacken quickly, so stay close and stir constantly. Wait until the cashews are completely coated in sugar, then remove them from the heat.

Now spread the cashews onto a baking sheet lined with parchment paper, leaving some space between them, and let them cool. 
Once completely cooled, store the cashews in an airtight container.
